Ingredients
Here are the ingredients you need
- 250g oat flour
- 75g cornstarch
- 1/2 packet baking powder
- 1/2 tsp baking soda
- 2 medium eggs
- 3 tbsp homemade date paste
- 140ml milk
- 50ml olive oil
- 1 splash vanilla extract
Topping
- Strawberries
- 2 pots plain skyr yogurt
Step by step
Method
- 1Whisk the dry ingredients together in a bowl.
- 2In another bowl, whisk the wet ingredients together.
- 3Fold both mixtures together until thoroughly combined.
- 4Transfer the batter into a cake tin that has been oiled and lined with baking paper.
- 5Bake at 180ºC for 35-40 minutes with top and bottom heat.
- 6Meanwhile, blend a few strawberries with the skyr yogurt and set aside. Take the cake out of the oven and let it cool slightly.
- 7Gently unmould the cake and slice it in half horizontally.
- 8Spread the reserved strawberry yogurt filling over the bottom layer, top with the other half, add more yogurt over the top, and decorate with fresh strawberries.
- 9All done! Now we can enjoy our gluten-free strawberry and yogurt cake with no added sugar.
Extras
- 1You can use a different flour of your choice.
- 2A mild-tasting olive oil or vegetable oil works well here.
- 3You can use only baking powder or only baking soda if needed.
- 4Sweetener or honey can be used instead of date paste.
- 5A chia egg makes a great substitute for the eggs.
- 6Feel free to swap the strawberries for mixed berries.
- 7Mascarpone makes a wonderful alternative to skyr.
