Ingredients
Here are the ingredients you need for this recipe
- 2kgs of tomatoes
- 1 tablespoon homemade date syrup
- Himalayan pink salt
- Extra virgin olive oil
Equipment
- Food processor / kitchen robot
Step by step
Method
- 1Wash and chop the tomatoes (you can peel them if you like, but I prefer making the sauce using the whole tomato).
- 2Place them in the food processor jug and blend on speed 6 for 4 minutes.
- 3Then season to taste with salt and add a generous drizzle of olive oil.
- 4Cover with the lid, leaving the measuring cup slightly ajar so steam can escape and the liquid can reduce.
- 5Cook for 30 minutes at speed 1, 110ºC, and heat level 6.
- 6After this time, add the date syrup and cook for 5 more minutes (if it's still quite watery, let it cook a bit longer; it depends a lot on the variety of tomato).
- 7Transfer to airtight containers and, once cooled, refrigerate or freeze.
- 8All done! Our Healthy Tomato Sauce made in the food processor is ready
Method without a food processor
- 1Wash and grate the tomatoes.
- 2Transfer them to a pot over medium heat.
- 3Then season to taste with salt and add a generous drizzle of olive oil.
- 4Cover with a lid, preferably glass so you can watch how the sauce cooks down.
- 5Cook for 20 minutes over medium heat.
- 6After this time, add the date syrup and cook for 5 more minutes (if it's still watery, cook a little longer depending on the tomato).
- 7Transfer to airtight containers and, once cooled, refrigerate or freeze.
Notes
- 1You can make it lighter by using your preferred sweetener instead of date syrup.
- 2You can also add onion, carrot, and so many other things. This base recipe is purely tomato.
