Ingredients
For the sponge
- 4 whole eggs
- 120g oat flour (or whichever flour you normally use)
- 1 teaspoon baking powder
- Vanilla extract
For the filling
- 90% dark chocolate
- 300g light Greek yogurt or mascarpone
- A few drops of liquid sucralose
For the coating
- 90% dark chocolate
Step by step
Method
- 1Preheat the oven to 180ºC.
- 2Add all the sponge ingredients to a blender and blend until completely smooth.
- 3Line a baking sheet with parchment paper and spread the batter out evenly across the entire surface.
- 4Bake for 10 minutes (or until the sponge is just cooked through).
- 5Meanwhile, prepare the filling by mixing the Greek yogurt with the sucralose and finely shaved dark chocolate flakes.
- 6Once the sponge has cooled down, it's time to roll it.
- 7Gently peel the parchment paper off the sponge sheet and lay it onto a clean piece of plastic wrap.
- 8Spread the filling mixture evenly over the top.
- 9Very gently roll the sponge up into a neat cylinder.
- 10Wrap it tightly with the plastic wrap and place it in the fridge to set.
- 11In the meantime, bring a pot of water to a gentle simmer and set a heatproof bowl on top to melt the coating chocolate over a double boiler.
- 12Unwrap the sponge cake, trim the ends diagonally to give it that classic log shape, and set it on a wire rack.
- 13Cover with the melted chocolate and, before it sets, run a fork along the surface to create realistic bark textures.
- 14Let it chill and set in the fridge.
- 15Decorate however you like before serving.
- 16All set! Time to slice and enjoy this healthy holiday Yule log cake.
