Today we're treating ourselves to this healthy cashew custard, a creamy dessert made with oat milk and cashew butter. We love that delicate touch of vanilla and how easy it is to make right at home. We can top each cup with a whole wheat biscuit and cocoa nibs for a lovely crunchy contrast.

Ingredients

Here are the ingredients you'll need

  • 800ml unsweetened oat milk
  • 1 splash of vanilla extract
  • 4 tablespoons date paste
  • 35g whole oat flour
  • 6 egg yolks
  • 4 tablespoons cashew butter
  • 1 handful of cacao nibs (optional)
  • Whole wheat biscuits (optional)

Step by step

Method

  1. 1Heat the oat milk in a saucepan, reserving one small cup.
  2. 2Add the oat flour to the reserved cup of milk and stir until completely dissolved, then set aside.
  3. 3Whisk the egg yolks together with the date paste and the splash of vanilla extract.
  4. 4As soon as the milk comes to a boil, lower the heat to minimum and pour in the egg yolk mixture along with the oat flour mixture.
  5. 5Stir constantly so the mixture begins to thicken nicely.
  6. 6Turn off the heat once it starts to thicken up and stir in the cashew butter.
  7. 7Use a whisk to help blend everything together smoothly.
  8. 8Pour into small bowls or ramekins and let cool.
  9. 9Once cool, top with a biscuit and the cacao nibs, then chill in the fridge for at least 3 hours.
  10. 10All done! Time to enjoy our HEALTHY CASHEW CUSTARD

Notes

  1. 1You can sweeten this with whatever you prefer and adjust the sweetness to your liking.
  2. 2You can swap the oat flour for cornstarch, just use a slightly smaller amount.
  3. 3You can also use hazelnut, almond, or peanut butter—they're all delicious here.
