Lamb's Lettuce and Tomato Salad

Be the first to rate it!

This lamb's lettuce and tomato salad is one of my go-to recipes because it takes hardly any effort and the combination of flavors is wonderful. I pair ripe Raf tomatoes with diced goat cheese, spring onion, radishes, and sweet corn, then toss in raw nuts for that lovely crunch. Just wash, chop, and mix: in 10 minutes, salad for two is ready.

If you're looking for simple lamb's lettuce salads, this balance works beautifully thanks to the creamy cheese, crisp vegetables, and crunchy nuts. It makes a perfect side dish for lunch or a light dinner when you don't feel like turning on the stove.

Frequently asked questions

Can I prepare this lamb's lettuce and tomato salad ahead of time?

You can prep the ingredients and store them in airtight containers in the fridge until the next day. Keep the greens completely dry and separate from the tomatoes, and add the nuts right before serving so they stay wonderfully crunchy.

What cheese can I use instead of goat cheese?

You can swap it for diced queso fresco or well-drained fresh mozzarella if you prefer a milder taste. Feta also works nicely, though it will give a saltier punch.

Can I make this salad without nuts?

Yes, feel free to leave them out; the radishes and spring onion already provide plenty of crisp texture. If you're avoiding nuts due to an allergy, remember to check the labels on the other ingredients as well.
