Ingredients

Here are the ingredients you need

  • 140g spelt flour
  • 1 plain yogurt
  • 3 XL eggs
  • 90ml olive oil
  • 1 packet baking powder
  • 50g defatted cocoa powder
  • 1 pinch pink salt
  • 150g powdered sweetener
  • Zest of 2 oranges
  • Chocolate sprinkles (optional)

Step by step

Method

  1. 1Mix the dry ingredients together.
  2. 2Mix the wet ingredients together.
  3. 3Combine all the ingredients until you get a smooth, uniform batter.
  4. 4Pour into a greased or parchment-lined baking pan and scatter the sprinkles on top.
  5. 5Bake at 180ºC in a preheated oven for 20-25 minutes.
  6. 6Let cool, unmold, and slice into pieces.
  7. 7All done! Our MOIST CHOCOLATE SPONGE CAKE is ready to enjoy.

Notes

  1. 1My pan is shallow and rectangular (30x20x5 cm); if you use a deeper or larger pan, double the quantities and baking time.
  2. 2This is sweetened to our taste, so if you like things very sweet, you may want to add a bit more sweetener.
  3. 3You can swap the spelt flour for all-purpose, whole wheat, or pastry flour. With other types of flour, the result won't look quite like the photo.
  4. 4If you sweeten with dates, the batter might turn out denser and not quite as light and fluffy.
