Baked Roasted Pumpkin Flan

Desserts & sweets
Be the first to rate it!

Today we're making a pumpkin flan that brings something a little different to our homemade desserts. We make the most of the rich flavor of roasted pumpkin and the gentle sweetness of date syrup to create an easy, wonderfully creamy treat. We bake it gently in a water bath in the oven so we can savor every single spoonful at our own pace.

Ingredients

Here are the ingredients you need

  • 700g roasted pumpkin
  • 2 eggs
  • 2 tablespoons cornstarch
  • 300ml unsweetened plant-based milk
  • 3-4 tablespoons date syrup
  • Ground cinnamon
  • Vanilla extract

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2In a bowl, add the puréed roasted pumpkin, date syrup, eggs, cornstarch, and cinnamon to taste. Mix well and set aside.
  3. 3Heat the plant-based milk with a splash of vanilla extract.
  4. 4Once the milk comes to a boil, turn down the heat and pour in the mixture from the bowl, stirring constantly so everything integrates smoothly.
  5. 5Pour the batter into a flan mold or individual ramekins (which you can lightly coat with date syrup beforehand if you like).
  6. 6We're going to bake the flan in a water bath (baño maría). Fill a deep baking tray with about three fingers of water and place the mold inside.
  7. 7Place in the oven and bake at 150ºC for approximately 40-50 minutes.
