Be the first to rate it!

Today we're making a comforting noodle stew with squid tentacles, a warm spoon dish packed with flavor that comes together without any fuss in the kitchen. We combine tender squid tentacles with thick noodles and a rich sofrito that gives the broth so much character. We love bringing the whole casserole dish right to the table and sharing every spoonful.

Ingredients

Here are the ingredients you need

  • 200g thick fideo noodles
  • 600g squid tentacles (rejos)
  • 200g frozen peas
  • 2 carrots
  • 1 onion
  • Tomato paste
  • 3 garlic cloves
  • Chili pepper (optional)
  • Himalayan pink salt
  • Extra virgin olive oil
  • 1l homemade vegetable or fish broth

Step by step

Method

  1. 1Add the chopped squid tentacles to a deep paella pan or wide pot so they release their liquid; once it has cooked off, drizzle in a bit of olive oil and brown them lightly.
  2. 2Once cooked, remove them to a plate.
  3. 3Add the onion and sauté until softened and translucent, then add the rest of the vegetables with another splash of oil and a pinch of salt.
  4. 4Stir in the finely minced garlic and the chili pepper.
  5. 5When the garlic starts to turn golden, add two tablespoons of tomato paste.
  6. 6Return the tentacles to the pan.
  7. 7Cover with the broth.
  8. 8Bring to a boil, then turn off the heat. Let the broth rest until you're ready to eat.
  9. 9Add the noodles and cook over medium heat according to the package instructions until al dente.
  10. 10Finally, remove from the heat and let rest for 2 to 3 minutes.
  11. 11Done! Time to enjoy our NOODLE STEW WITH SQUID TENTACLES.
