Ingredients

Here are the ingredients for this appetizer

  • 1kg octopus
  • Baby potatoes
  • Homemade hummus
  • Sweet paprika
  • Flaky sea salt
  • Extra virgin olive oil

Step by step

Method

  1. 1Thaw the octopus 1 day ahead.
  2. 2Bring a pot of salted water to a boil; once boiling, dip the octopus in and out 3 times for a few seconds each to 'scare' it.
  3. 3Then submerge it completely and simmer for 35-45min.
  4. 4After 20min, add the peeled potatoes and let them cook together.
  5. 5Once tender, sear the octopus in a skillet with a generous splash of olive oil.
  6. 6When the potatoes have cooled down, slice them into rounds roughly 1cm thick.
  7. 7Cut the octopus into bite-sized pieces.
  8. 8Assemble the skewers, alternating between boiled potato rounds and octopus chunks.
  9. 9Spread a bed of hummus onto a serving dish, arrange the skewers on top, and finish with a drizzle of extra virgin olive oil, sweet paprika, and a sprinkle of flaky salt.
