Squid Tentacle and Potato Stew

Today I'm tying on my apron to make this comforting potato and squid tentacle stew, a homemade dish with genuine seaside flavours to savour by the spoonful. Alongside the squid tentacles, it has cuttlefish and squid, and you can toss in some sea scallop meat if you fancy. Tomato paste, sweet paprika, and bay leaves give the broth a lovely depth without needing lots of seasonings.

This stew is the kind of dish I love bringing to the table for a relaxed meal, cooked unhurriedly on a gentle simmer. It serves four and takes 20 minutes of prep and 45 minutes of cooking. The scallops are optional, so you can leave them out and stick with the rest of the ingredients.

Ingredients

Here are the ingredients you'll need

  • 2 large potatoes
  • 100g fresh cuttlefish, cleaned
  • 100g fresh squid, cleaned
  • 400g squid tentacles, cleaned
  • 200g sea scallop meat (optional)
  • 2 tbsp tomato paste
  • 1 tsp sweet paprika
  • 3 garlic cloves
  • 2 onions
  • 2 bay leaves
  • Himalayan pink salt
  • Whole black peppercorns
  • Parsley
  • Extra virgin olive oil
  • Water
  • 1 glass of white wine

Step by step

Method

  1. 1Add the chopped cuttlefish, squid, and tentacles to the pot with a drizzle of olive oil and cook so they release their water.
  2. 2Meanwhile, finely chop the onions.
  3. 3Once the cuttlefish, squid, and tentacles are cooked, transfer them to a plate and cook the onions with another splash of oil until nicely softened.
  4. 4When golden, add the minced garlic, tomato paste, paprika, and bay leaves, and sauté briefly.
  5. 5Pour in the glass of wine and continue cooking to let the alcohol evaporate.
  6. 6Add the reserved cuttlefish, squid, and tentacles back into the pot.
  7. 7Add the potatoes, peeled and cut into chunks.
  8. 8Cover with water, add the scallop meat, salt, and pepper.
  9. 9Cover the pot and simmer gently for 15-20min (depending on the type of potato).
  10. 10Uncover, taste to check the seasoning, and check if the potatoes are tender. If done, stir in finely chopped parsley.
  11. 11All done! Now we can tuck into our squid tentacle and potato stew.

Frequently asked questions

Can you freeze this squid tentacle and potato stew?

Yes, though potatoes tend to turn mealy once thawed. If you're making the stew with freezing in mind, it's best to set aside a portion without potatoes and add freshly cooked ones when reheating.

How long does this stew keep in the fridge?

Store it in an airtight container in the fridge and enjoy within two days. Pop it in the fridge within two hours of cooking and only reheat the portion you're going to eat, making sure it's piping hot.

Can I make this potato stew without scallops?

Yes, the scallops are optional and there's no need to substitute them. The tentacles, cuttlefish, and squid already give you a rich, deeply savoury seafood base.
