Ingredients

Here are the ingredients you need

  • 250g almond flour
  • 6 eggs
  • 2 oranges
  • 2 tablespoons creamy date paste

Topping

  • Healthy chocolate hazelnut spread
  • Flaked almonds

Step by step

Method

  1. 1Blend the eggs, creamy date paste, finely grated zest of both oranges, and almond flour thoroughly in a blender.
  2. 2Pour into a cake tin lined with baking paper.
  3. 3Bake in a preheated oven for about 35-45 minutes at 180ºC (or until a skewer comes out clean).
  4. 4Leave to cool.
  5. 5Spread with the chocolate hazelnut spread.
  6. 6Scatter the flaked almonds over the top.
  7. 7And that's it! Our ORANGE AND ALMOND CAKE is ready to enjoy.

Extras

  1. 1If you don't have oranges, lemon zest works just as well.
  2. 2Almond flour is simply finely ground almonds, stopped before they turn into almond butter.
  3. 3The topping is optional: you could top it with orange slices or a dusting of vanilla protein powder, like a traditional Tarta de Santiago.
  4. 4If you use a smaller tin, the cake will come out thicker and taller.
  5. 5If you don't have dates, feel free to use your sweetener of choice.
