Today we're making a peach and quark cake with fresh peaches, a simple recipe we love enjoying nicely chilled. It turns out light and moist, topped with sliced fruit and finished with a brush of peach jam that makes it simply irresistible for an afternoon treat.

Prep: 15 minCook: 55 minServes: 8

Ingredients

Here are the ingredients you need

  • 500g quark cheese
  • 3 peaches
  • 4/5 tablespoons oat flour
  • 3 eggs
  • Sweetener (date paste, erythritol)
  • No-added-sugar peach jam

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2Blend all the ingredients together, setting aside the jam and two of the peaches.
  3. 3Pour the batter into an ovenproof baking dish.
  4. 4Thinly slice the two reserved peaches and arrange them over the top of the batter.
  5. 5Bake in the oven for 50-60min at 180ºC.
  6. 6Once baked, allow it to cool and brush the top with the peach jam.
  7. 7All done! Now we can enjoy our PEACH AND QUARK CAKE

Notes

  1. 1We love having this chilled, so once it cools down to room temperature, I recommend storing it in the fridge.
  2. 2It is a light and moist cake, so don't expect it to come out of the oven completely firm or dry.
  3. 3Sweetener is to taste: try the batter beforehand and add more sweetness before pouring it into the tin if you feel it needs it.
  4. 4The amount of flour will determine how dense the texture turns out, which is why I suggest 4/5 tablespoons. You can even add a bit more if you like.

Tips and tricks

Let the cake cool inside the turned-off oven with the door slightly ajar to keep it from cracking.

Refrigerate for at least 4 hours, or ideally overnight, before turning it out of the tin.

Brush the top with slightly warmed jam to give it a lovely glossy finish.
