Prep: 30 minCook: 20 minServes: 8

Ingredients

Ingredients you'll need

  • 70g whole oat flour
  • 10 egg whites
  • 2 tsp baking powder

Filling and frosting

  • Sweetener (I used erythritol)
  • 500ml coconut milk
  • 100g cornstarch
  • A few drops of lemon juice

Step by step

Method

  1. 1Add all the cake batter ingredients into a blender.
  2. 2Blend thoroughly until you get a smooth, lump-free batter.
  3. 3Divide among the cake pans (I used five 15cm mini pans).
  4. 4Bake at 180ºC for 15-20 minutes.
  5. 5Meanwhile, prepare the cream by whisking the coconut milk (it should be fully liquid) with the cornstarch and sweetener to taste.
  6. 6Pour into a small saucepan over medium heat, stirring constantly; add a few drops of lemon juice and keep stirring until it thickens to the desired consistency.
  7. 7Let it cool down slightly, then place it in the fridge to chill.
  8. 8Unmold the sponge layers and let them cool completely.
  9. 9Assemble the cake by alternating sponge and cream layers until finished, then cover the outside with the remaining cream.
  10. 10Decorate to your liking.
  11. 11All done! Time to enjoy our BIRTHDAY CAKE WITH PLANT-BASED WHIPPED CREAM
