Pasta with Roasted Carrot Cream Sauce

Today I am making pasta with a creamy carrot sauce, an easy way to give your usual pasta night a lovely, colorful twist. Roasting the carrots brings out their natural sweetness, and blending them with unsweetened soy milk and spreadable cream cheese creates a silky, comforting sauce. A sprinkle of herbes de Provence adds that fragrant herbal touch I adore.

This carrot sauce is a wonderful alternative when you want a break from classic tomato sauces. This recipe makes two generous servings, and I like to use gluten-free pasta. It is a dish to cook without rushing, taking about an hour between prepping and roasting, though you can easily roast and blend the sauce ahead of time and simply boil the pasta right before eating.

Frequently asked questions

Can I freeze this carrot pasta sauce?

Yes, it freezes very well on its own, separate from the pasta. Let the sauce cool completely, portion it into airtight containers, and freeze. Thaw overnight in the fridge; when reheating, stir well over low heat and add a splash of soy milk if it thickened up too much.

Can I substitute the high-protein spreadable cheese?

Absolutely, regular plain cream cheese works just as well in equal amounts. If you prefer to keep it dairy-free, use a neutral plain vegan spreadable cream cheese and adjust the salt at the end.

Is this pasta with carrot cream sauce gluten-free?

The recipe calls for gluten-free pasta, but if you are preparing this for someone with celiac disease, make sure to check the labels on your soy milk, spreadable cheese, and dried herbs as well. Use clean cookware and fresh boiling water that has not been in contact with gluten.
