Be the first to rate it!

Today we're making whole wheat spaghetti with tomato sauce and meatballs, one of those cosy homemade dishes you just want to put in the middle of the table to share. We pair a rich tomato sauce with chicken and beef meatballs that simmer gently right in it. That way, every single bite of pasta soaks up all the flavour, and you'll want to finish every last strand!

Ingredients

Here are the ingredients you need

  • 1.5kg tomatoes
  • 1 onion
  • Date syrup or sweetener of choice
  • 2 carrots
  • Pink Himalayan salt
  • Extra virgin olive oil
  • 350g minced chicken breast
  • 350g minced beef
  • 2 eggs
  • 3 tablespoons whole oat flour
  • 300g whole wheat spaghetti

Step by step

Method

  1. 1Mix the meatball ingredients (chicken, beef, eggs, flour, and salt) until well combined, shape into balls, and set aside.
  2. 2Blend all the vegetables in a food processor and add them to the pressure cooker along with the date syrup, salt, and olive oil to taste.
  3. 3Cook in the pressure cooker for 8-12min (depending on how watery the tomatoes are).
  4. 4Brown the meatballs in a frying pan to sear them, then add them to the tomato sauce and cook together over low heat for 15-20min.
  5. 5Meanwhile, cook the spaghetti until al dente following the packet instructions, rinse quickly with cold water to stop the cooking, and drain well.
  6. 6Toss the pasta into the pan with the meatballs and sauce, and let it all cook over low heat for 5min so it absorbs all the flavour.
  7. 7Done! Time to sit down and enjoy our WHOLE WHEAT SPAGHETTI WITH TOMATO SAUCE AND MEATBALLS.
