Potato and Carrot Spanish Omelette

Today I'm making a potato and carrot Spanish omelette, an easy way to give the classic tortilla de patatas a little twist. I love how the gentle sweetness of the carrot pairs with the soft, cooked onion, needing nothing more than eggs, olive oil, and salt to bring everything together.

I cook the potatoes in the microwave and finish the tortilla in the frying pan, where I can keep an eye on the eggs and get the texture just how I like it. This makes enough vegetable tortilla for four, perfect for lunch or a fuss-free dinner at home. It's ready in about 45 minutes and a great pick when you want something a little different without tracking down hard-to-find ingredients.

If you like switching up your everyday tortilla, I recommend my potato and aubergine Spanish omelette and my carrot and courgette Spanish omelette.

Step by step

Method

  1. 1Peel and dice the potatoes, then transfer them to a microwave steamer or a deep dish covered with cling film.
  2. 2Cook on high power for 10-20 min, depending on your microwave and the size of your potato cubes.
  3. 3Coarsely grate the carrots and set aside.
  4. 4Meanwhile, heat a pan with a drizzle of olive oil and gently fry the onion until soft and lightly golden.
  5. 5Whisk the eggs in a large bowl with a pinch of salt.
  6. 6Add the cooked potatoes, onion, and raw grated carrot to the bowl with the beaten eggs.
  7. 7Mix well so all the ingredients are thoroughly coated in egg.
  8. 8Pour the mixture into the pan and cook over low heat on both sides until set to your liking.
  9. 9All done! Our POTATO AND CARROT SPANISH OMELETTE is ready to enjoy.

Notes

  1. 1Add an extra pinch of salt to this tortilla, as carrots are naturally quite sweet.
  2. 2Because the carrot is grated, it cooks through gently in the egg and WILL NOT STAY RAW, but feel free to sauté it with the onion if you prefer.
  3. 3If you don't have a microwave, you can use roasted or steamed potatoes instead.

Frequently asked questions

How do I store the potato and carrot omelette?

Keep it well covered in the fridge within two hours of cooking and eat within two days. If you're saving it for later, make sure the eggs are cooked through.

Can I make it without onion?

Yes, you can leave out the onion and keep the rest of the ingredients as they are. The carrot will still provide its gentle sweetness, though you'll miss a bit of the juiciness that cooked onion brings.

Can this tortilla be frozen?

It can be frozen once fully cooked and cut into portions, though the potatoes can take on a slightly mealy texture after thawing. Defrost it in the fridge and reheat thoroughly before eating.
