Ingredients

Here are the ingredients you need

  • 2 large potatoes
  • 1 large onion
  • 1 handful of fresh spinach
  • 1 log of goat cheese
  • 5 XL eggs
  • Extra virgin olive oil
  • Pink salt

Equipment

  • Tortilla pan or non-stick skillet

Step by step

Method

  1. 1Peel and dice the potatoes into small cubes.
  2. 2Place them in a microwave-safe container or a deep plate covered tightly with plastic wrap.
  3. 3Cook on high power for 10–20 minutes, depending on your microwave, until fork-tender.
  4. 4Beat the eggs with a pinch of salt and set aside.
  5. 5Meanwhile, heat a skillet over medium heat with a drizzle of olive oil and sauté the onion until soft and translucent.
  6. 6Once the onion starts to turn golden, add the spinach. As soon as it wilts down, remove from the heat.
  7. 7Add the warm potatoes, onion, spinach, and sliced goat cheese into the bowl with the beaten eggs.
  8. 8Gently mash the potatoes with a fork so they soak up the egg and blend nicely with the rest of the ingredients.
  9. 9Pour the mixture into the skillet and cook over low heat on both sides until set to your liking.
  10. 10And that's it! Time to enjoy our potato, spinach, and goat cheese tortilla.
