Ingredients

Ingredients you need for this recipe

  • 1/2 spring onion
  • 1 large roasted red pepper
  • 1 handful of peeled frozen prawns
  • 1 handful of cooked green beans
  • 3 garlic cloves
  • 1 small cup of quinoa
  • 1 glass of vegetable broth
  • 1 hard-boiled egg

Step by step

Method

  1. 1In a non-stick skillet, sauté the spring onion until soft.
  2. 2Next, add the finely minced garlic and the prawns.
  3. 3Once the prawns have released their liquid, add the chopped roasted pepper and the cooked green beans.
  4. 4Cook everything together well.
  5. 5Place the quinoa in a fine-mesh strainer and rinse it thoroughly.
  6. 6Once drained, add it to the skillet and stir well to combine the ingredients.
  7. 7Cover everything with vegetable broth (I used the cooking water from the green beans).
  8. 8Let it simmer for 15 minutes over low heat (keep adding broth little by little so it stays juicy; it should not dry out).
  9. 9Once the time is up, turn off the heat.
  10. 10Finely grate a hard-boiled egg over the pan, stir it in, and cover.
  11. 11Let it rest for 5 minutes.
  12. 12All done! Our prawn and green bean quinotto is ready to enjoy.
