Roasted Pepper and Garlic Mayonnaise

Sauces & basics
Be the first to rate it!

If you're looking for a red pepper mayonnaise, here is my version made with roasted pepper, garlic, and hard-boiled eggs: no added oil or store-bought mayo. To make this pepper mayonnaise, I use both cooked egg whites and only one of the yolks, which helps give it body and a lovely creamy texture.

I whip it up in 5 minutes with the eggs already boiled and the roasted pepper ready, using just an immersion blender. I blend the ingredients and add water little by little until it's just how I like it, thicker or lighter. It's such a handy option to pair with our favorite dishes whenever we want a quick, simple sauce and have these ingredients on hand.

If you'd like to try something different, I recommend my Oil-free garlic mayonnaise and my Avocado mayonnaise, two delicious alternatives to pair with your dishes.

Frequently asked questions

How long does pepper mayonnaise keep in the fridge?

Store it in a tightly sealed container in the fridge and enjoy it within 24 to 48 hours. Always use a clean spoon to serve it and avoid leaving it out at room temperature.

Can I use canned piquillo peppers?

Yes, you can substitute the roasted pepper with a similar amount of well-drained piquillo peppers. Taste it before adding salt, as canned peppers often already contain some.

How do I make sure it turns out creamy and not too watery?

Blend the pepper, garlic, both cooked egg whites, and just one yolk first. Add the water in small splashes and keep blending until you reach the texture you like.
