Be the first to rate it!

Today we're whipping up our homemade Veganesa (vegan mayo), a creamy, effortless sauce made with soy milk and olive oil. We love keeping a jar on hand to dress salads, dip roasted veggies, or spread on sandwiches to make them truly irresistible. With just a few simple tricks, we get the perfect texture and serve it nice and chilled.

Ingredients

Here are the ingredients you need for this recipe

  • 50ml unsweetened soy milk
  • 100ml olive oil
  • Juice of half a lime
  • 1 pinch pink Himalayan salt

Step by step

Method

  1. 1Pour the soy milk, lime juice, and salt into the beaker of an immersion blender.
  2. 2Start blending at low-to-medium speed without moving the blender wand, drizzling the oil in slowly as you go.
  3. 3Once it begins to emulsify and thicken, gently move the wand up and down until you reach your desired consistency.
  4. 4Done! Our Veganesa (vegan mayo) is ready.

Extra tips

  1. 1It is essential to use soy milk, as its proteins are what help the sauce emulsify and set.
  2. 2It's very important that all ingredients are at room temperature.
  3. 3Double the ingredients if you want to make a larger batch.
  4. 4For an extra-thick mayo, add a little more oil.
  5. 5You can also use unrefined sunflower oil if you prefer a milder flavor.
  6. 6Serve well chilled.
  7. 7Keeps well for 2-3 days in a lidded jar in the fridge.
  8. 8Goes wonderfully with almost any savory dish you can imagine.
