Ingredients

Here are the ingredients you'll need for this recipe

  • 40gr whole rolled oats
  • 1 tablespoon baking powder
  • 1 egg
  • 5 egg whites
  • Pure unsweetened cocoa powder (raw cocoa)

Tools

  • Silicone baking mold

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Blend the rolled oats in a blender and add the baking powder so it incorporates well.
  3. 3Add a tablespoon of pure cocoa powder as well and set aside.
  4. 4Whip the 5 egg whites plus the white from the whole egg until stiff peaks form (save the yolk).
  5. 5Once they reach stiff peaks, add the egg yolk while continuing to whisk well.
  6. 6Next, gently fold in the reserved oat flour, baking powder, and cocoa mixture, continuing to whisk carefully so the batter doesn't deflate.
  7. 7Pour the batter into the mold.
  8. 8Top with a sprinkle of rolled oats.
  9. 9Bake for 25min at 180ºC.
  10. 10Once the time is up, turn off the oven and let it sit inside for 5min without opening the door.
  11. 11All done! Our whole oat and cocoa fit cake is ready.

Notes

  1. 1These measurements are for my own single breakfast; if you want to make it for more people or for several days, just double or triple them.
  2. 2The height of the cake will depend a lot on your mold, so try using one that is small in diameter and tall.
