Today at Cocinandomelavida we're making an apple and custard tart that's simply made for lingering around the table. We combine a flaky puff pastry base with homemade custard sweetened with date paste, finished with a layer of sliced apples: an easy recipe that we'll chill properly before bringing to the table.

Ingredients

Here are the ingredients you'll need

  • 1 sheet puff pastry
  • 1 large apple
  • Date paste
  • 2 egg yolks
  • 500ml unsweetened oat milk
  • 50g cornstarch

Step by step

Method

  1. 1Warm the oat milk in a saucepan, reserving a small glass to dissolve the cornstarch in.
  2. 2Meanwhile, whisk the egg yolks with 2 tablespoons of date paste in a bowl.
  3. 3When the oat milk begins to boil, pour in the whisked yolks and the milk mixed with cornstarch.
  4. 4Lower the heat and stir constantly until thick, then let it cool until lukewarm.
  5. 5Line a round tart tin with the puff pastry.
  6. 6Peel and thinly slice the apple.
  7. 7Spread the custard over the puff pastry and cover with the sliced apples.
  8. 8Bake at 200ºC for about 10–15 minutes.
  9. 9Let it cool completely, then brush the top with date paste.
  10. 10Refrigerate for at least 3–4 hours.
  11. 11Ready! Now we can tuck into our APPLE AND CUSTARD TART.
