We are celebrating a very special day with my baby's first birthday cake: a stack of whole oat pancakes layered with whipped fresh cheese and cocoa. We make it right in a pan, no oven needed and without any added sweeteners, alternating fillings to make it look lovely. Let's make a simple recipe filled with love!

Prep: 10 minCook: 15 minServes: 2

Ingredients

For the pancakes

  • 35gr rolled whole oats
  • 5 egg whites
  • 1 tsp baking powder

Filling and topping

  • 0% fat whipped fresh cheese (queso fresco batido or quark)
  • Defatted unsweetened cocoa powder

Step by step

Method

  1. 1Blend the rolled oats using a blender or food processor.
  2. 2Add the egg whites and whisk well.
  3. 3Next, place a non-stick frying pan (preferably small so the pancakes turn out nice and thick) over the heat.
  4. 4Pour in the batter in batches and cover with a lid so they cook through.
  5. 5Repeat the process until you have used up all the batter.
  6. 6In a bowl, add 3 tablespoons of whipped fresh cheese along with unsweetened cocoa powder to taste.
  7. 7Mix well and assemble the pancakes into a tower, alternating one layer with the cocoa mixture and another with plain fresh cheese.
  8. 8Finally, put a tablespoon of defatted cocoa powder in a glass with a splash of water until you get the right consistency for a syrup, and pour it over our pancake tower.
  9. 9Done! Our baby's first birthday cake is ready.

Extras

  1. 1Neither the filling nor the pancakes are sweet, since pure cocoa is bitter and whole oats are not naturally sweet either. I didn't use any sweetener because this is a cake for a 1-year-old baby, but feel free to sweeten it with banana, dates, or anything else if you prefer.
