Baked Chicken with Olives

This oven-baked chicken with olives is one of those meals I turn to when I want an easy, hearty dinner without spending hours in the kitchen. Roasted over a bed of onions and veggies with tender boiled potatoes on the side, it makes a generous tray to share among six. It takes just 15 minutes of prep and 45 in the oven, giving you time to set the table and unwind while it bakes.

I love pairing portobello mushrooms, cherry tomatoes, and carrots with stuffed green olives: they each bring something special to the pan, and the chicken only needs garlic powder, pepper, salt, and extra virgin olive oil. The vegetables soak up the savory roasting juices, and pre-cooked potatoes absorb all that incredible flavor without starting from scratch.

If you love these flavors, I recommend my Lemon chicken with olives and my Baked chicken thighs with vegetables to keep weeknight dinners exciting.

Ingredients

Here are the ingredients for 3-4 servings

  • 2 chicken thighs
  • 2 chicken leg quarters
  • 2 drumsticks
  • 2 onions
  • 1 handful portobello mushrooms
  • 1 handful cherry tomatoes
  • 2 carrots
  • Boiled potatoes
  • 1 handful stuffed olives
  • Pink salt
  • Garlic powder
  • Black pepper
  • Extra virgin olive oil

Step by step

Method

  1. 1Preheat the oven to 180ºC.
  2. 2In a baking sheet or roasting dish, make a base with julienned onions, sliced mushrooms, and julienned carrots.
  3. 3Arrange the chicken pieces on top, then scatter over the cherry tomatoes and stuffed olives.
  4. 4Season to taste with garlic powder, salt, pepper, and a generous drizzle of olive oil.
  5. 5Bake for about 35-45 minutes at 180ºC.
  6. 6When there are 15 minutes left, add the boiled potatoes to the pan so they absorb the juices.

Extras

  1. 1You can use raw sliced potatoes right from the start; I used boiled ones to use up an open jar from a salad we made.
  2. 2A splash of white wine or beer poured over the tray would also be out of this world.

Tips and tricks

BATCH COOKING

Keeps perfectly in the fridge for 3-4 days.

This dish freezes wonderfully if you leave out the potatoes or remove them beforehand.

Frequently asked questions

How long does baked chicken with olives last in the fridge?

It keeps well for 3-4 days in the refrigerator in a tightly sealed container. Store any leftovers within two hours of cooking and reheat only the portion you plan to eat.

Can I freeze this chicken with vegetables and olives?

Yes, it freezes well, but be sure to remove the potatoes first or freeze a portion without them, as cooked potatoes become mealy and watery when thawed. Pack the chicken with its pan juices and thaw in the fridge.

Can I use plain olives instead of stuffed ones?

Yes, you can swap stuffed olives for plain green or black olives, preferably pitted. Drain them well and be light-handed with extra salt, as olives bring plenty of their own.
