Today we're making baked lentil falafel, a simple recipe where ground cumin and fresh parsley bring lots of flavor. We roll up our sleeves to shape them however we like and enjoy them fresh from the oven. You can also easily adapt the recipe and fry them if you prefer.

Ingredients

Here are the ingredients you need

  • 250g raw lentils, soaked
  • 1 onion
  • 3 garlic cloves
  • 1 handful of fresh parsley
  • 1 tbsp salt
  • 2 tbsp ground cumin
  • Ground black pepper

Step by step

Method

  1. 1Soak the lentils in cold water overnight.
  2. 2The next day, drain them very thoroughly and add them to the food processor with the remaining ingredients.
  3. 3Process well and let the mixture rest in the fridge for at least 30min.
  4. 4Once chilled, shape into patties or balls and bake at 190ºC for about 12-15min, depending on your oven.
  5. 5All done! Our LENTIL FALAFEL is ready.

Extras

  1. 1If you make them with cooked lentils, you'll need to add flour until you get a workable dough.
  2. 2They can be fried instead of baked.
  3. 3You can shape them into round balls instead of flatter patties like mine.
  4. 4You can follow the exact same process using chickpeas.

Tips and tricks

Always use raw soaked lentils, never cooked: if they're cooked, the mixture turns mushy and the falafels will fall apart.

Drain them very well and don't skip chilling the mixture in the fridge; this gives it structure so it's much easier to shape.

Serve them with homemade tzatziki sauce, inside warm pita bread, or tossed into a fresh vegetable bowl.
