Lentil, Carrot, and Curry Omelette

Today I'm making a lentil, carrot, and curry omelette to give the everyday omelette a lovely twist. It's made with two eggs, jarred brown lentils, and grated carrot, with that touch of curry powder that I love so much. It's a single-serving recipe you can have ready in just 14 minutes, prep and cooking included.

I think it's such an easy way to include legumes in your lunch or dinner without any fuss. The grated carrot blends beautifully with the egg and lentils; draining the lentils well keeps the mixture from getting watery. With just a handful of ingredients and a skillet, you have another great idea to switch up your weekly meals.

To keep switching things up with legumes, I recommend my Lentil and Rice Curry Burgers and my Curried Lentils with Mushrooms.

Frequently asked questions

Can I make this omelette with home-cooked lentils?

Yes, you can easily swap the jarred lentils for home-cooked ones. Just cook them until tender but still holding their shape, and drain them thoroughly before mixing them with the eggs.

How should I store leftovers of this lentil omelette?

Keep it in an airtight container in the fridge within two hours of making it, and enjoy it the next day. For safe keeping, just make sure the egg is fully cooked through.

Can I replace the curry powder with a different spice?

Yes, a little ground cumin or sweet paprika works wonderfully with both the lentils and the carrot. Start with just a pinch so it doesn't overpower the other flavors.
