Be the first to rate it!

These chickpeas with mixed vegetables are a simple, comforting spoon dish that I make whenever I want something easy in the kitchen. I use cooked chickpeas and frozen vegetable medley, a practical shortcut to get lunch ready in 30 minutes. It's a lifesaver on those days when you crave something warm and wholesome without spending too much time over the stove.

I let everything simmer gently with vegetable broth, garlic, a bay leaf, and a touch of hot paprika to give the stew some kick. That's all it takes to make this chickpea stew really flavorful with just a few ingredients. If you prefer it more brothy, simply add a splash more broth. It makes three servings, and you can also make it ahead for another day.

For more legume dishes, I recommend my Chickpeas with Vegetables and these Lentils with Vegetables and Chickpeas, two wonderful ways to keep enjoying comforting spoon dishes.
