Today I'm making baked textured soy protein bites with roasted red peppers, an easy way to give your weekly menu a delicious twist. I love pairing the sweetness of roasted peppers with garlic powder, onion powder, and parsley, plus a pinch of cayenne to taste for a subtle kick.

These soy bites use a little flour to help bind the mixture; it's best to adjust the amount gradually until you can shape them easily without them crumbling. I serve them over a simple sofrito, which pairs wonderfully with the peppers and adds plenty of juiciness to the plate. With these quantities you'll get two servings, perfect for a meatless meal when you want something different from everyday beans and lentils.

To keep mixing up your menu, take a look at my Textured soy protein with peppers and cheese and these Chickpea and broccoli bites, two great ideas to alternate with these bites.

Ingredients

Here are the ingredients you need for this recipe

  • 100gr textured soy protein
  • 100gr roasted red peppers
  • Garlic powder
  • Onion powder
  • Parsley
  • Pink Himalayan salt
  • Ground cayenne
  • Water
  • Quinoa flour (or whichever flour you prefer)
  • Healthy sofrito

Step by step

Method

  1. 1Soak the textured soy protein in plenty of hot water for 20 minutes.
  2. 2Once the time is up, drain very well and let it cool.
  3. 3Preheat the oven to 180ºC.
  4. 4Pulse the roasted peppers in a food processor or chopper and transfer to a bowl.
  5. 5Repeat the process with the drained soy protein and add it to the bowl.
  6. 6Season to taste with salt, garlic powder, onion powder, parsley, and cayenne, then mix thoroughly so the flavours blend together.
  7. 7Spread a little flour onto a plate, take portions of the mixture, shape into small balls, roll them lightly in the flour, and place them on a baking tray.
  8. 8Bake for 15 minutes at 180ºC or until they take on a lovely golden colour.
  9. 9Serve over our healthy sofrito.
  10. 10All done! Our baked textured soy protein and roasted red pepper bites are ready to enjoy.

Extra tips

  1. 1You can add other vegetables into the mix.
  2. 2Feel free to season with any other spices you love.
  3. 3Instead of plain water, you can rehydrate the soy protein with tamari sauce or broth.
  4. 4Handle the bites gently once they come out of the oven so they don't crumble.
  5. 5You can pan-fry them instead (personally, I'm not much for fried food).

Frequently asked questions

Can you freeze these textured soy protein bites?

Yes, you can freeze them once baked and completely cooled, ideally stored separately from the sofrito. Defrost them in the fridge and reheat gently in the sofrito so they stay nice and juicy.

How do I keep the soy bites from falling apart?

Once hydrated, squeeze the soy protein thoroughly to remove excess moisture before combining it with the well-drained roasted peppers. Add the flour a little at a time until the mixture holds its shape nicely, without adding too much so they don't turn out dry.

Can I make these bites gluten-free?

Yes, use certified gluten-free quinoa flour and make sure to check the labels on your textured soy protein, spices, and sofrito. If you switch to another flour, adjust the amount gradually as different flours absorb moisture differently.
