Textured soy protein with chickpeas

Today I'm making chickpeas with textured soy protein, a simple recipe to enjoy a plant-based meal without complicating things in the kitchen. It has mushrooms, garlic, and a tomato sofrito that brings plenty of flavor. The vegetable broth reduces down while the soy absorbs it, leaving it juicy and beautifully combined with the rest of the ingredients.

If you're looking for textured chickpeas, I should mention that here I use whole chickpeas and textured soy protein: they're two distinct ingredients. I love this combination for an everyday lunch for two, finished with a pinch of oregano and a rich sauce that comes together without needing a long list of ingredients.

If you like this combination, I recommend my Textured soy Bolognese and my Chickpeas with mushrooms, two great ways to keep varying your plant-based meals.

Frequently asked questions

Do the chickpeas need to be already cooked?

Yes, to keep the cooking time around 20 minutes you'll need cooked chickpeas. You can use canned ones, rinsed and drained, or cook dried chickpeas beforehand at home.

Can you freeze chickpeas with textured soy protein?

Yes, you can freeze them in individual containers once they have cooled completely. Thaw in the fridge and, when reheating, add a splash of broth if the soy has soaked up too much of the sauce.

Can I swap the mushrooms for another vegetable?

You can use finely diced zucchini or bell peppers. Sauté them until tender before finishing the dish, and adjust the broth so the result stays juicy without having excess liquid.
