Today we're making these baked chickpea and broccoli bites, an easy recipe to give cooked chickpeas a fun twist. We blend everything, shape the little balls, and let them brown in the oven while we tidy up the kitchen. With a touch of cumin and, if you fancy a little kick, a pinch of cayenne, they'll be ready to share in no time.

Ingredients

Here are the ingredients you need for this recipe

  • 1 jar of cooked chickpeas
  • 1 head of broccoli
  • 1 onion
  • 2 garlic cloves
  • Ground cumin
  • Pink Himalayan salt
  • Ground cayenne (optional)
  • 1 tbsp whole spelt flour

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Add all the ingredients to a food processor or blender.
  3. 3Blend everything thoroughly.
  4. 4Let the mixture rest for a few minutes.
  5. 5Line a baking sheet with parchment paper.
  6. 6Roll into small bite-sized balls until all the mixture is used up.
  7. 7Bake at 180ºC until nicely golden.
  8. 8All done! Our baked chickpea and broccoli bites are ready to enjoy.

Extra tips

  1. 1If the mixture feels too soft to shape, add a little more spelt flour. How firm it is depends a lot on the onion, which releases moisture as it blends.
  2. 2If you don't have a food processor, simply mash the chickpeas with a fork, chop the broccoli very finely, and grate the onion to pull the recipe together.
