Ingredients

Here are the ingredients you need

  • 1kg minced beef
  • 1 carrot
  • 1 onion
  • Cooked canned chickpeas
  • Canned whole peeled tomatoes or crushed canned tomatoes
  • Water, vegetable broth, or beef broth
  • A splash of red wine
  • Extra virgin olive oil
  • Chilli powder
  • 1 tablespoon ground cumin
  • 1/2 tablespoon ground cinnamon
  • Garlic powder
  • Pink salt

Step by step

Method

  1. 1Brown the minced beef in a large pan with a drizzle of olive oil.
  2. 2Once cooked through, add the finely diced carrot and onion.
  3. 3Saute well until tender, then add the tomatoes, spices to taste, and the chickpeas.
  4. 4Pour in a splash of red wine and a glass of water or broth, then let it simmer gently until the liquid reduces into a thick, juicy filling.

Here are the ingredients you need for the corn tortillas

  1. 1250g precooked corn flour (masarepa/harina PAN)
  2. 2250ml water
  3. 3Pink salt

Method

  1. 1In a bowl, mix the corn flour with the salt.
  2. 2Gradually pour in the water while kneading until a soft, pliable dough forms.
  3. 3Once the dough is smooth, divide it into small balls and press them flat to shape your tortillas.
  4. 4Cook them in a hot dry pan for a couple of minutes on each side, then wrap them in a clean kitchen towel to keep warm.
  5. 5Fill each warm tortilla with the spiced beef and chickpea mixture and enjoy.
