Here is how we make it step by step, with instructions for both a pressure cooker and a traditional pot.

Prep: 15 minCook: 60 minServes: 4

Ingredients

Here are the ingredients you'll need

  • 600g beef, cut into bite-sized cubes
  • 1 large onion
  • 2 carrots
  • Sliced button mushrooms
  • 2 large potatoes
  • 2 garlic cloves
  • 1 bay leaf
  • Sweet or hot smoked paprika
  • Vegetable broth
  • Extra virgin olive oil

Step by step

Method

  1. 1Add a splash of olive oil to a pot, season the beef with salt, and sear it well on all sides.
  2. 2While the meat browns, peel, wash, and chop the vegetables.
  3. 3Once well-seared, transfer the beef to a plate and set it aside.
  4. 4Add the finely diced onion to the pot and gently cook until softened and translucent.
  5. 5Once it begins to turn golden, add the carrots, mushrooms, potatoes, garlic cloves, and bay leaf.
  6. 6Season with salt and paprika to taste.
  7. 7Return the beef to the pot and pour in enough broth (or water) to cover everything by about a finger's width.
  8. 8Cook in a pressure cooker for 12-15min, or in a regular covered pot for around 45min.
  9. 9If there is still too much liquid at the end, simmer uncovered over high heat until the sauce thickens to your liking.
  10. 10Taste and adjust the salt if needed.
  11. 11All done! Time to enjoy our BEEF AND POTATO STEW.
