Today we're making beef koftas with spiced basmati rice, a dish packed with flavour where fresh coriander and warm spices lend that special touch. We'll shape our koftas and bake them in the oven while the rice simmers away on the stove: a wonderful combination to enjoy freshly made or freeze for another day.

Ingredients

Here are the ingredients for 8 servings

  • 1kg minced beef
  • 1 handful fresh coriander
  • 1 handful fresh parsley
  • 1 large onion
  • Ground cumin
  • Ground cinnamon
  • Black pepper
  • Pink salt

For the spiced basmati rice

  • 400g basmati rice
  • 900ml water
  • Dried onion flakes
  • Cinnamon, cloves, and cumin
  • Extra virgin olive oil

Step by step

Method

  1. 1Rinse the basmati rice thoroughly until the water runs clear to remove excess starch.
  2. 2In a pot with a drizzle of extra virgin olive oil, toast the spices very briefly until fragrant.
  3. 3Add the rice, stir well to coat, and cover with the water; cook covered for 15 minutes, then remove from heat and let rest for 5 minutes.
  4. 4For the koftas, grate or finely mince the onion together with the coriander and parsley, then place in a large bowl.
  5. 5Add the minced beef and spices, and mix everything thoroughly by hand.
  6. 6Shape into koftas and arrange them on a baking tray.
  7. 7Bake at 200ºC for 10-12 minutes.

Extra tips

  1. 1You can tuck them into warm pita bread with hummus and a fresh salad.
  2. 2This entire dish freezes wonderfully.
