Ingredients

These are the ingredients for the meatballs

  • 1 kg minced beef
  • 1 egg
  • 80 g soft rolled oats
  • Pinch of salt
  • Spices to taste
  • Fresh parsley

These are the ingredients for the sauce

  • 1 handful raw nuts
  • 1 onion
  • 1 slice of toasted bread
  • 200 ml white wine
  • Vegetable broth, beef broth, or water
  • Extra virgin olive oil

Step by step

Method

  1. 1In a bowl, mix the beef with the egg, salt, spices, parsley, and rolled oats.
  2. 2Next, shape the mixture into small balls and place them on a baking tray lined with parchment paper.
  3. 3Bake at 180ºC for 15 min.
  4. 4Meanwhile, heat a drizzle of oil in a frying pan, toast the nuts until lightly golden, and set them aside.
  5. 5In the same pan, cook the previously sliced onion until it starts to turn golden.
  6. 6Transfer the toasted nuts, golden onion, toasted bread, white wine, and broth to a blender.
  7. 7Blend thoroughly until you get a smooth, light sauce.
  8. 8Pour the sauce into a shallow saucepan, add the baked meatballs straight from the oven, and coat them well.
  9. 9Simmer over medium-low heat for 10 min so the sauce reduces and the meatballs absorb all the flavor.
