Today we're making braised artichokes with serrano ham and dates, a simple recipe with that wonderful sweet-and-savory contrast we love so much. We cook them gently with finely minced garlic, letting the cooking liquid reduce down to create an uncomplicated, deeply flavorful dish.

Ingredients

Here are the ingredients you need for this recipe

  • 4 large artichokes
  • 4 slices of serrano ham
  • 3 garlic cloves
  • Black pepper
  • 4 dates (optional)

Step by step

Method

  1. 1Trim the stems and outer tough leaves of the artichokes, then slice them in half.
  2. 2Place the artichokes in a deep skillet or a small pot and add just enough water to barely cover them (no more than that). You can use vegetable or chicken broth instead of water.
  3. 3Add the finely minced garlic cloves and cover with a lid so everything cooks through nicely.
  4. 4Once the liquid has reduced by half, tear the serrano ham with your fingers and stir it in.
  5. 5Season with black pepper to taste and continue cooking until all the liquid has evaporated.
  6. 6Finally, I added a few chopped dates and a pinch of ground cayenne over the top, but this step is completely optional if you prefer to leave it out.
  7. 7All done! Our braised artichokes with serrano ham and dates are ready.
