Today we're making baked artichoke flowers, a simple recipe with fresh artichokes and extra virgin olive oil that looks stunning on the table. With just a few steps and a little care, we get their leaves to open up like a flower. We enjoy them hot, warm, or cold, savouring every leaf right down to the heart.

Ingredients

Here are the ingredients

  • Fresh artichokes
  • Pink salt
  • Pepper
  • Extra virgin olive oil

Step by step

Method

  1. 1Preheat the oven to 180ºC, top and bottom heat.
  2. 2Prepare the artichokes by trimming the base flush with the stem so they sit flat.
  3. 3Trim the tips off the artichokes.
  4. 4Using a knife, make a gentle cross cut on top without cutting all the way into the centre.
  5. 5Place them on a baking tray with a drizzle of olive oil, salt, and pepper.
  6. 6Bake for about 45 minutes.
  7. 7Let them cool slightly and, very carefully, gently open their outer leaves to shape them into a flower.
  8. 8Serve with a drizzle of first-press 'Arbequina' extra virgin olive oil over the heart.

Extras

  1. 1Don't throw away the stems; once peeled, you can use them in a broth or roast them in the oven.
  2. 2You can rub the top of the artichoke with a lemon after trimming the tips so it doesn't turn brown.
  3. 3You can eat them cold, warm, or hot—they're always delicious.
  4. 4For the outer leaves, scrape the tender base with your teeth and discard the tough part.

BATCH COOKING

Keeps well in the fridge for 5-7 days.

I don't recommend freezing this dish.

You can reheat them in the microwave and they taste freshly made.
