Today I'm sharing a delicious, light idea that works just as well for a quick weeknight dinner as it does for an appetizer: zucchini rolls filled with serrano ham and cream cheese.

The contrast between the tender zucchini, the creamy filling, and the crunchy topping of baked breadcrumbs and cured cheese is simply fantastic.

Ingredients

  • Zucchini
  • Sliced serrano ham
  • Cream cheese
  • Breadcrumbs
  • Extra virgin olive oil
  • Black pepper
  • Finely chopped cured cheese

Step by step

  1. 1Slice the zucchini very thinly.
  2. 2Place a slice of ham over each zucchini strip.
  3. 3Add a spoonful of cream cheese over the ham.
  4. 4Carefully roll each one up into a tight cylinder.
  5. 5Scatter breadcrumbs over the bottom of the baking dish where you will arrange the rolls.
  6. 6Place the rolls in the dish, drizzle with a little extra virgin olive oil, add black pepper to taste, and top with a bit more breadcrumbs.
  7. 7Sprinkle finely chopped cured cheese over the top to taste.
  8. 8Bake for 20-30 minutes at 180 °C, adjusting the time to your oven.

Tips and tricks

Use a mandoline or a wide vegetable peeler to cut the zucchini into thin, even strips so they roll up smoothly without snapping.

If the strips feel too stiff, sear them on a griddle for a few seconds or let them sweat with a pinch of salt before filling.

For an extra golden and crispy top, switch on the oven grill function during the last 2 or 3 minutes of baking.

Frequently asked questions

Can I swap the serrano ham for something else?

Yes, you can use cooked ham or turkey breast if you'd like a milder flavor.

How long do they take to bake?

They take between 20 and 30 minutes at 180 °C, depending on your oven and how thick the zucchini slices are.

How should I store leftover rolls?

Store them in an airtight container in the fridge for up to two days. To reheat, warm them in the oven so they stay nice and crisp.
