Ingredients
Here are the ingredients you need for this recipe
- 100g organic quinoa soup mix
- 1/2 litre water
- 1 fresh salmon steak
- 1 handful broccoli florets
- 1 pinch pink Himalayan salt
- 1 pinch black pepper
- Garlic powder
- Ground cayenne pepper
Step by step
Method
- 1Clean the salmon by removing the skin and central bone.
- 2We'll use those trimmings to make a quick fish stock.
- 3Place a small pot of water over medium heat, add the salmon trimmings, and let them simmer to infuse the water with flavour.
- 4Cut the rest of the salmon into bite-sized pieces, add them to a frying pan, and sear briefly on both sides.
- 5Stir the quinoa soup mix directly into the pan.
- 6Sauté for a minute or two so it toasts lightly.
- 7Pour the simmering salmon broth through a fine strainer to catch any bones, adding the liquid straight into the frying pan.
- 8Turn up the heat and season to taste with pink Himalayan salt, black pepper, garlic powder, and ground cayenne.
- 9As soon as it comes to a boil, turn down the heat.
- 10Let it cook gently for 15 minutes.
- 11If the liquid reduces too quickly, add another glass of water, continuing to top it up as needed while it cooks.
- 12After 15 minutes, taste the broth and adjust the salt if needed.
- 13Stir in the broccoli florets.
- 14Cook for another 5 minutes.
- 15All done! Our brothy quinoa with salmon and broccoli is ready to serve.
Extras
- 1If you don't have a prepared quinoa soup mix, regular quinoa works fine too—just consider sautéing a bit of leek and carrot first for extra flavour.
- 2You can also use store-bought fish broth instead of simmering the salmon trimmings in water.
