Be the first to rate it!

Today we're making a comforting cheesy broccoli soup, the kind of cosy, warming bowl you want when you feel like keeping things simple in the kitchen. We sear broccoli florets and blend cream cheese right into the broth for a rich, velvety texture. We use the broccoli stalks too, turning humble everyday ingredients into pure comfort.

Ingredients

Here are the ingredients you need

  • 2 heads of broccoli
  • 1 leek
  • 1 small onion
  • 150g cream cheese or soft spreadable cheese
  • Extra virgin olive oil
  • Pink salt
  • Black pepper
  • Water or vegetable broth

Step by step

Method

  1. 1Peel and thoroughly wash the vegetables.
  2. 2Finely chop the leek and onion, then add them to a pot with a drizzle of olive oil and a pinch of salt.
  3. 3Cook until softened and lightly golden.
  4. 4Meanwhile, sear the broccoli florets in a separate hot skillet until nicely charred; set them aside.
  5. 5Chop the broccoli stalks and add them to the pot with the leek and onion.
  6. 6Cover with water or vegetable broth, put the lid on, and simmer for 10 minutes.
  7. 7Remove the stalks (you can blend them smooth and stir them back in if you like) and add the soft cheese, stirring well until completely melted and smooth.
  8. 8Taste and adjust the salt, adding a pinch of freshly ground black pepper.
  9. 9Gently drop in the seared broccoli florets, cover with the lid, and let everything simmer together for about 5 minutes.
  10. 10Ready! Our CHEESY BROCCOLI SOUP is done and ready to enjoy.
