Cream of Broccoli Soup

Soups
5.0 (1 rating)

Today we're making a cosy cream of broccoli soup that's pure comfort in a bowl, prepared with chicken broth and a spoonful of fat-free whipped fresh cheese for extra creaminess. We make it all in a single pot without complicating our lives, seasoning to taste with salt and pepper. If you fancy a little twist, a pinch of curry powder works beautifully here.

Ingredients

Here are the ingredients you need for this recipe

  • 1 head of broccoli
  • 1/2 litre chicken broth
  • 1/2 onion
  • Pink Himalayan salt
  • Black pepper
  • 0% fat-free whipped fresh cheese
  • Grated cheese powder

Step by step

Method

  1. 1Sauté the finely chopped onion in a pot.
  2. 2Once it starts taking on a light golden colour, add the chicken broth and the chopped broccoli florets.
  3. 3Season to taste with salt and pepper.
  4. 4Let it simmer until the broth has reduced by half.
  5. 5Blend thoroughly using an immersion blender until smooth and creamy.
  6. 6Return the pot to low heat, stir in 1 tablespoon of 0% whipped fresh cheese, and season with the cheese powder.
  7. 7Cook gently over low heat for another 2 minutes.
  8. 8Taste and adjust the salt or pepper as needed.
  9. 9All done! Our comforting cream of broccoli soup is ready.

Extra tips

  1. 1You can omit the whipped fresh cheese if you want a classic, simple vegetable purée.
  2. 2Curry powder gives this soup a lovely, fragrant touch.
  3. 3For a topping, I love searing a few reserved broccoli florets in a pan until golden; finished with a pinch of pink salt and black pepper, it's delicious.
