Today I'm bringing you a delicious, super easy leftover recipe: gluten-free chicken and chickpea tacos you'll want to make every single week. If you have leftover meat and legumes after simmering a pot of broth, this is the perfect way to give them a second life packed with flavor.

For the base, we'll make homemade tortillas with rice flour—completely fuss-free and naturally gluten-free. All that's left is to fill them with shredded chicken, sautéed chickpeas, and fresh greens for a wholesome dinner in minutes.

  3. 3Meanwhile, heat a splash of olive oil in another pan with finely minced garlic cloves.
  4. 4Before the garlic turns golden, add the shredded chicken from the broth along with the chickpeas.
  5. 5Sauté everything well and season with smoked paprika to taste.
  6. 6Assemble the tacos: gluten-free tortilla on the bottom, then lettuce, chicken and chickpeas, cherry tomatoes, and sweetcorn.
