Today we're making chicken and turkey meatballs with cuttlefish, a surf-and-turf pairing we love bringing to the table. We cook them with gently browned onions and a splash of white wine, letting the cuttlefish juices bring all the flavors together in the kind of home-cooked dish that begs for good bread to dip in.

Ingredients

Here are the ingredients you'll need

  • 800g chicken and turkey meatballs
  • 2 large onions
  • 1 large cuttlefish
  • Splash of white wine
  • Pink salt
  • Extra virgin olive oil
  • Ground pepper

Step by step

Method

  1. 1In a deep skillet with a splash of extra virgin olive oil, sear the meatballs until lightly browned on all sides.
  2. 2Remove them to a plate.
  3. 3In that same oil, gently cook the diced onions until soft and translucent.
  4. 4When the onions begin to take on a light golden color, add the chopped cuttlefish and cover so it releases its juices and braises gently.
  5. 5Once the cuttlefish liquid has reduced, add the meatballs back in along with a pinch of salt, pepper, and a generous splash of white wine.
  6. 6Cover and simmer over medium heat until all the liquid has evaporated.
