Today we are making chicken and turkey meatballs in a healthy sofrito, an easy recipe with ripe tomatoes and carrots to enjoy a homemade sauce brimming with flavor. We love cooking everything in the same pot to catch every bit of pan drippings from browning the meatballs. With a little patience, you get one of those dishes that practically begs for bread to dip.

Ingredients

Here are the ingredients you need for this recipe

  • 1 package chicken and turkey meatballs
  • 1kg ripe tomatoes (or canned crushed tomatoes)
  • 1 onion
  • 2 carrots
  • 1 red bell pepper
  • Pink Himalayan salt
  • Garlic powder (optional)
  • Pure stevia (or whichever sweetener you use)

Step by step

Method

  1. 1In a pot, cook the meatballs until nicely browned all over, then set them aside.
  2. 2Next, wash and blend the tomatoes, onion, carrots, and red bell pepper.
  3. 3Pour the mixture into the same pot you used to cook the meatballs.
  4. 4Cook covered over medium heat until the liquid reduces and reaches your desired sofrito consistency.
  5. 5Season to taste with salt and balance the acidity with a touch of stevia or sweetener.
  6. 6Add the meatballs and let them simmer gently on low heat for 10 minutes.
  7. 7Turn off the heat and let everything rest for a few hours so the meatballs soak up all that wonderful flavor.
  8. 8All done! Our chicken and turkey meatballs with healthy sofrito are ready.
