Linguine with Vegetables and Chicken

Rice & pasta
Be the first to rate it!

Today I'm making linguine with chicken and vegetables to mix up the weekly menu without complicating things. It's a recipe for two, with courgette, carrots, spring onions, and mushrooms, perfect for an everyday meal. I like to keep the pasta al dente so it holds its texture when tossed with the rest of the ingredients.

The secret to this linguine with vegetables and chicken is in the spices: you can use an Asian blend or whatever you have at home. If you feel like boosting that flavor, finish with a dash of soy sauce, though it's completely optional. You can also make it ahead of time for another day.

Ingredients

Ingredients for 2 people

  • 200g linguine
  • 2 spring onions
  • 2 carrots
  • 1 courgette
  • 1 handful of mushrooms
  • 2 chicken breasts
  • Pink salt
  • Asian spices (or whatever you like)
  • Extra virgin olive oil
  • Soy sauce (optional)

Step by step

Method

  1. 1Cut the spring onions, carrots, and courgette into julienne strips and finely chop the mushrooms.
  2. 2Add a drizzle of extra virgin olive oil to the pan and gently sauté the spring onion.
  3. 3Meanwhile, bring a pot of water to the boil and cook the pasta al dente following the package instructions.
  4. 4Once the onion starts to soften, add the carrot and courgette and sauté everything well.
  5. 5Drain the pasta in a colander and rinse with cold water to stop the cooking, then set aside.
  6. 6When the vegetables begin to soften, add the chopped mushrooms.
  7. 7Dice the chicken breasts, add them to the pan, and season lightly with salt.
  8. 8Once the chicken is cooking through, add spices to taste.
  9. 9Finally, toss in the linguine, mix well, and let it sit for a couple of minutes so the flavors come together.
  10. 10Finish with a splash of soy sauce at the end for an extra Asian touch.

Extras

  1. 1Stopping the cooking of the pasta is essential for BATCH COOKING if you don't want it to overcook and turn mushy or clumpy for the days ahead.
  2. 2You can make this with any other vegetables you have.
  3. 3You can easily swap in a different protein source.

Frequently asked questions

How long does chicken linguine keep in the fridge?

It keeps for 2-3 days in the fridge in an airtight container. When reheating, add a small splash of water if the pasta feels dry and heat thoroughly.

Can you freeze linguine with vegetables and chicken?

Yes, you can freeze it, ideally in individual portions in tightly sealed containers. Defrost in the fridge before reheating; the pasta and vegetables may turn out slightly softer.

Can I make it without soy sauce or Asian spices?

Yes, the soy sauce is optional and you can use whichever spices you have on hand or prefer. If you decide to add soy sauce, adjust the salt at the end so it doesn't end up too salty.
