Ingredients

Here are the ingredients for 2 people

  • 200g precooked couscous
  • 200ml boiling water
  • 2 spring onions
  • 2 carrots
  • 1 green bell pepper
  • 1 handful frozen peas
  • Peeled king prawns
  • 2 garlic cloves
  • Pink salt
  • Extra virgin olive oil

Step by step

Method

  1. 1In a bowl, put the couscous with the boiling water and cover with a plate. Leave for 5 min, then transfer to a plate or tray. Fluff the couscous with your hands so the grains separate nicely and let it cool.
  2. 2Finely chop the onion, carrot, pepper, and garlic cloves.
  3. 3Add the carrot, pepper, and spring onions to a frying pan with a drizzle of extra virgin olive oil.
  4. 4Sauté gently until they start to turn golden.
  5. 5Next, add the minced garlic and cook for a minute.
  6. 6Stir in the frozen peas and sauté a little bit longer.
  7. 7Season with salt to taste and add the prawns.
  8. 8Once the prawns are cooked through, add the couscous and mix well so all the flavours come together.
