Crispy Baked Asparagus

Vegetables
Be the first to rate it!

Today we're making crispy baked asparagus using green asparagus and toasted bread, a simple and different way to enjoy this vegetable. We coat them in egg and breadcrumbs to give them that wonderful crunch we love so much. You can serve them as a side dish or set them out as a tasty snack to share, and feel free to adapt the crumb with whatever bread you have at home.

Ingredients

These are the ingredients you need for this recipe

  • 1 bunch green asparagus
  • Toasted bread
  • 1 egg
  • Pink Himalayan salt
  • Black pepper (optional)

Step by step

Method

  1. 1Wash the asparagus and cut the spears in half (remember to snap off the woody ends first).
  2. 2Bring a pot of water to a boil, drop in the asparagus, and blanch for 5min.
  3. 3Drain in a colander and rinse under cold water to stop the cooking.
  4. 4Crush the toasted bread finely until you get a coarse crumb.
  5. 5Mix the breadcrumbs with a pinch of salt and pepper.
  6. 6Beat the egg in a shallow dish.
  7. 7Line an oven rack or baking sheet with parchment paper and preheat the oven to 200ºC.
  8. 8Dip each asparagus piece into the beaten egg, then coat thoroughly in the breadcrumb mixture and place onto the prepared paper.
  9. 9Bake at 180ºC for 10min until golden.
  10. 10And that's it! Our crispy baked asparagus is ready to enjoy.

Extras

  1. 1Instead of toasted bread, you can use whole oat bran, rolled oats, or wholemeal breadcrumbs—whatever you have on hand. I just used what was in my pantry.
  2. 2You can use this exact same recipe with courgette sticks or other vegetables.
