Today we're making date and bacon croquettes to enjoy that sweet and savory contrast we love so much. We combine the deep, rich flavor of bacon with the natural sweetness of Medjool dates to get a wonderfully creamy center and a super crispy coating. Let's make them together and give our homemade croquettes a fun twist!

Prep: 25 minCook: 20 minServes: 4

Ingredients

Here are the ingredients you'll need

  • 120g bacon
  • 20g whole spelt flour
  • 20g olive oil margarine
  • 4 Medjool dates
  • 200ml plant-based milk
  • 1 pinch of pink salt
  • Breadcrumbs
  • 2 eggs
  • Black sesame seeds (optional)
  • Oil for frying

Step by step

Method

  1. 1Melt the margarine in a skillet and cook the bacon until it's just starting to brown. Then add the Medjool dates, which should be finely chopped or blended.
  2. 2Once everything is nicely softened, add the flour, stirring constantly to toast it lightly.
  3. 3Pour in the plant-based milk and stir continuously so it thickens up without any lumps.
  4. 4Transfer the mixture to a bowl, let it cool down, and then pop it in the fridge to rest for at least 5 hours.
  5. 5Once chilled, shape the croquettes and dredge them in flour, beaten egg, and a mix of breadcrumbs and black sesame seeds.
  6. 6Fry in plenty of hot oil, then drain on paper towels to remove any excess oil.
  7. 7All done! Our DATE AND BACON CROQUETTES are ready to enjoy.
