Ingredients
Here are the ingredients you'll need
- 80g reduced-salt cured ham
- 45g cornstarch
- 400ml unsweetened plant-based milk
- 1/2 white onion
- A drizzle of extra virgin olive oil
- Nutmeg
- Pink Himalayan salt
- Black pepper
- Fresh parsley
For coating
- Crushed toasted breadcrumbs
- 2 eggs
Step by step
Method
- 1Gently sauté the finely diced onion in a skillet with a drizzle of olive oil until soft and translucent.
- 2Add the finely diced ham (trimmed of excess fat).
- 3Stir in the cornstarch and toast it lightly for a minute.
- 4Gradually pour in the plant-based milk, adding a pinch of nutmeg, chopped parsley, pepper, and salt.
- 5Whisk continuously so no lumps form; the mixture will begin to thicken up nicely.
- 6Once thickened, transfer to a glass dish and allow to cool down to room temperature.
- 7Cover with plastic wrap pressing against the surface and chill in the fridge overnight.
- 8The next day, preheat your oven to 160ºC.
- 9Shape the croquettes using two spoons, then coat them in beaten egg and roll in crushed toasted breadcrumbs.
- 10Place them onto a baking sheet lined with parchment paper and bake for 15 minutes.
- 11All done! Now we can enjoy our HEALTHY HAM CROQUETTES.
