Feta Cheesecake with Quick Homemade Jam

Today I'm having fun with a feta cheesecake that brings together the salty edge of feta cheese and a quick microwave strawberry topping. Cream cheese and plain yogurt soften the overall flavor, while the eggs and cornstarch help the batter set beautifully in the oven. I love that contrast between the savory cake and the express homemade strawberry jam sweetened with date paste.

My version of this feta cheesecake is super simple: blend the ingredients, let the oven do its thing, and then let it chill completely before digging in. It makes eight servings, so it's a great option to share for dessert or make ahead of time for a get-together at home.

If you love combining cheese and fruit, I recommend my Cheese and jam dessert cups and this Sugar-free strawberry ginger jam to switch up the topping.

Frequently asked questions

Does a cheesecake made with feta end up too salty?

Feta definitely brings a savory touch, but it's balanced out by a larger amount of cream cheese and plain yogurt, which smooth out its sharpness. The sucralose and the strawberry topping with date paste complete the sweet-and-salty contrast.

Can I swap the cream cheese?

You can use the same amount of any other plain spreadable cream cheese. The flavor and texture might shift slightly depending on its fat and moisture content, but you don't need to change any of the other ingredients.

How should I store this cheesecake, and can it be frozen?

Keep it covered in the fridge and enjoy it within three days. You can also freeze it in individual slices, ideally without the jam topping, and thaw them in the fridge; the texture might change slightly.
