Today we're making gnocchi with peas and ham, a simple and tasty one-pan recipe. We love letting the onion brown nicely to bring out all that rich flavor. Plus, we cook the gnocchi without boiling them first—a little trick that helps them keep their wonderful texture when reheated another day.

Ingredients

Here are the ingredients for 2 people

  • 1 Bag of gnocchi
  • 1 Large onion
  • 2 Garlic cloves, minced
  • 100g cured ham, finely chopped
  • 200g frozen peas
  • Pink salt
  • Extra virgin olive oil
  • Black pepper

Step by step

Method

  1. 1Add oil to the pan and gently cook the onion until it starts to turn golden brown.
  2. 2Next, add the minced garlic and sauté briefly.
  3. 3Toss in the peas and ham, and cook for a couple of minutes.
  4. 4Add the gnocchi directly, without boiling them beforehand.
  5. 5Season with salt and pepper to taste, stir everything well, lower the heat, cover, and cook for 5min.

Extra Notes

  1. 1If you boil the gnocchi first, they'll end up sticky and overcooked. In my opinion, it's not a great idea if you plan on eating them a few days later.
  2. 2Without boiling, sautéed straight in the pan, they reheat with a texture that tastes just like freshly made.
